The Nanking Cookbook, The American Red Cross Book of Recipes, 1924
1924. Condition: Good. The Nanking Cookbook, an enlargement and revision of The American Red Cross Book of Recipes for the use of Chinese Foodstuffs Published by The Woman's Auxiliary of The University of Nanking with the permission of the Nanking Chapter of the American Red Cross. Shanghai: Presbyterian Mission Press, 1924. A scarce English and Cantonese cookery, the only Chinese-published cookbook "to deal only with native products and recipes that could be made from them". The book has the original quarter cloth over paper boards. There is some general wear to the cover, but the outer binding is intact. The inside string binding has come loose, and the last few pages (#163-166, see picture of Table of Contents) are missing. All other pages are clean without the usual staining or notes found in cookbooks. One page has a slight tear (see picture). Original owner's signature of "Mrs. C. M. McQuarrie", who was living in Nanking with her military husband, appears on the inside cover. This edition is an enlargement and revision of The American Red Cross Book of Recipes from 1918, and appears to be fairly rare, with only a few copies available worldwide. In the preface to this new cookbook, the committee for the Women's Auxiliary explains what sets their book apart: "This book was definitely war product. It was prepared with two ideas in view: that of utilizing native products as substitutes for the home imported foodstuffs, and, secondly, that of reducing the cost of living.
